Buyers
Who buys quail — and which format
Quail buying is format buying. The same bird does four different jobs depending on the buyer, and the range is built so each job has its exact format:
The Format Logic
Buy the format the dish demands
Every buyer type comes through the same door — the quote form — and gets the same thing back: written pricing from a person who works with this bird daily. If a request names a format that fights the dish described in it, the reply will say so and suggest the better cut. That kind of candor is most of what “authority” means in practice.
Evaluating the bird? Say so. Samples and pack questions are handled in the same exchange, and buyers comparing the two graded packs can quote both in one request and decide on paper. The full range — squab, game, cheese, ghee, grocery — rides along in the same form when the program spans the store.

Tell us the dish, the shelf, or the program. The reply will match the format to it.
